Yes, it's true. All good things must come to an end. It has been a nice summer of Thursday markets. However, this week is the last week of the Thursday market. Saturday openings will continue at their normal hours, 8 a.m. - 1 p.m.

Sarah's Farm's Cushaw

Also known as a gourd, cushaw is a member of the winter squash family. This interestingly-shaped squash tastes more like a pumpkin or sweet potato and is frequently used in pies. It's interior consists of a pale yellow-orange flesh. Here are a few fast facts about this type of squash:

Originated in Mexico
Annual plant
Blooms in July or August
Seeds create an edible oil
Used frequently in Cajun cuisine
Normally hard to find in markets
Minimal effort needed to grow
Low in calories
Good source of minerals and vitamins

8 Ways to Make School Lunch Prep A Breeze

Well, well, well, in less than a week, we'll be seeing big, bright buses zipping down the streets with happy students glancing out the windows. That's right! School will soon be back in session! Jackson Public Schools begin classes on Wednesday, August 7. This means one thing: It is time to start packing those school lunches again! This whole situation must be a bittersweet moment for most parents (great that your children are going to get the education they need to become productive, employed citizens in the future but horrible that routines have to be adjusted and accommodations have to be made.)

Well, don't fret! The Mississippi Farmers Market is a great place to find nutritious additions to your student's lunch bag! Here are 8 ways you can can make packing their lunch a breeze this school year:

Ask the school in advance if there are any forbidden items that cannot be brought in your child's lunch bag.
Prepare lunches for the week on Sunday evenings if they can be frozen and the night before if they cannot.
Take advantage of foods that can be frozen--and freeze them to grab and go throughout the week! This includes PB&J sandwiches, rice, and pasta.
Heat up soup in the morning and pack it in a thermos to stay warm.
A lunch box with divided compartments helps with portion control and cuts down on packaging.
Freeze drinks the night before, and they will then serve as ice packs and COLD beverages!
Use up leftovers from breakfast for day-of prep.
AFTER SCHOOL: Last but certainly not least, prepare a grab-and-go snack station for your children if they will arrive home before you arrive home from work.
