Skidmore's wonderful Tang Museum presented a timely and thought provoking panel discussion on "Farms, Food and the Future" last Saturday.
We were honored to serve on the panel and can say that there is an impressive group of Skidmore students just raring to be farmers and food issues people. The event was in conjunction with Slow Food Saratoga, with Slow Food NY governor Ed Yowell moderating.
Skidmore Executive Chef Jim Rose's super delish and beautifully prepared dinner of vegetables, cheeses and meat from local farms and the Skidmore garden, was a masterwork in itself.
Thank you to all involved for your interest in the future of farming and the country's food supply.

For the BEST pumpkin seeds ever, scoop up one of the Kakai Japanese pumpkins (pictured above left). These have amazingly delicious seeds with the added health benefit of protecting prstate health. Just toast.

Last Chance to Try Posole???
Tamales are A-Steamin'

As a huge rainbow arced over Rte 22 and into Dave Ramos's camper after yesterday's 18th downpour, the nose-twitching, tummy-activsting laroma of simmering Pozole curled its way into the stand....Pozole, or, Posole (poh-SOH-leh), the flavorful stew made with pulled pork shoulder, softened white corn kernels, a tomato broth and seasoned with many generations of secret ingredients.

Enjoy it with a squeeze of fresh lime or lemon, chopped lettuce or cabbage, crumbled tortilla chips and hot sauce if you desire. The combinations of flavors and textures are sensational.
Pozole freezes well.

Ready at noon.... served until 6 p.m.

A CINDERELLA STORY

One of our Albany restaurant customers,
Chef Larry Schepici of the Brown Derby,
loves our Cinderella pumpkins for his favorite fall soup.
He was kind enough to share the recipe.


Cinderella Pumpkin & Leek Bisque

3 Lbs Cinderella Pumpkins Peeled, Deseeded, Cut into Slices
1 Lb. Carrots, Peeled, Sliced Thin
1 � Lbs. Leeks, No Green, Wash and Slice Thin
� cup Clarified Butter
� gal Chicken Stock
� tsp. Ground Nutmeg, Freshly Grated
� tsp. Ground White Pepper
1 Bay Leaf
Roux: (Melt butter (1/4 lb.), mix in flour (1/4 lb.)
1 qt Heavy Cream
3 tbsp Whole Diced Butter
2 tbsp. Kosher Salt
1 cup Dry White Wine

METHOD:
In a large thick gauge pot, add clarified butter, leeks and carrots. Slowly sweat for 20 - 25 minutes until tender then add pumpkin, chicken stock and simmer 1 � hours.
Thicken with roux, then add scalded cream, all seasonings and whisk in butter.
Last step - Puree soup in blender until smooth.
Serve with toasted, salted pumpkin seeds and roasted cranberries for garnish.
