The market is brimming with a bounty of gorgeous greens from Arugula to spinach, and everything in between. These are the salad days my friends! Little Gem romaine, Spicy Mesclun Mix, and microgreens.

Speaking of green... we're launching a new Green Ribbon program to recognize our vendors who are making the switch to more sustainable packaging options. Kudos to Zekraft and Green Vida Co. who have been walking the walk for a few years with their reusable container and jar programs. And a big shout-out to Cody's Eats & Sweets who ditched the plastic clamshell containers and are debuting new compostable sugarcane containers this week! As shoppers, we'd encourage you to bring your reusable shopping bags and insulated beverage bottles, and even your own containers for products like pickles and prepared foods. Have ideas on how we can make the market experience more eco-friendly? Talk to us, or our vendors. We're all in this together!

Carter Lansing has been a friend to the Easton Farmers' Market for well over a decade. He's performed countless times in the circle, at our former Weyerbacher Wednesday Market, at the Easton Public Market, PA Bacon Fest, Live at the Falls, and at Easton Heritage Day. He also helped launch Music for the Market, an annual musician-led fundraiser that took place back in the day. Carter's music and songwriting come straight from the heart and he's about as fine a human being as you'll ever meet. We're proud to welcome our old friend back to the riverfront tomorrow. Come grab your favorite markets eats and drinks and soak up the legit vibes of this local legend.

Brown Butter Asparagus Pasta with Bacon

The goal - to celebrate asparagus season for all it's worth by eating as much as you can as often as you can! You can start with this recipe. Grab some pasta from Cuz Vinny, and your favorite Breakaway Farms bacon (there are only 50 varieties to choose from), brown that butter, and dig in!

First cherry tomatoes of the season! It might not look or feel like summer (please someone bring on the sun!) but it sure tastes like summer with these little gems! Keep it simple with Caprese kabobs! Get to the market early to grab your pint before we run out!

Matt & Jess will also have spring mix, spicy mesclun mix, arugula, spinach, chard, collard greens, cilantro, dill, parsley, radish, hakurei turnips, scallions, pak choy, green kale, tuscan kale, head lettuce (red, green, romaine)

Cabbage Throw Farm
Salad season has arrived at Cabbage Throw Farm! Baby green mixes including spring mix, farmers mix, arugula, baby kale and butterchard. Beautiful Little Gem Romaine and freshly bunched beets are also ready for their first harvest this week! Additional produce includes various microgreens, spinach, carrots, bok choy, daikon radish, red radish, hakurei turnips, parsley, dill, cilantro and scallions.

Scholl Orchards
Rhubarb and Asparagus are still the reigning stars of the Spring show. But Scholl's extensive variety of late season apples is no joke. Evercrisp, Honeycrisp, Ludacrisp, Goldrush and Pink Lady are all available, along with fresh-pressed cider.

Phillips Farms
Flowering Chives are a fun way to add a little pizzazz to your next meal with their beautiful purple color and delicious mild onion flavor. They are only here for another week or two. Other produce at Phillips Farms you’ll find this week: Greenhouse Tomatoes, Asparagus, Spring Garlic, Lettuce, Spinach, Kale, Swiss Chard, Scallions, fresh herbs and so much more.
Minsi Mountain Flower Farm
Minsi Mountain Flower Farm hopes that everyone had a great Mother's Day weekend, and wants to thank all of the wonderful EFM customers for shopping local for their Mother's Day blooms last week. They'll be back this weekend with the last of their mixed tulip bunches, which feature a lovely variety of specialty tulips, as well as some premium bouquets featuring the first of their high tunnel blooms. With the warm week ahead now is also the perfect time to plant dahlia tubers, and they'll have lots of varieties available this week. Their tubers can be planted in your garden to provide blooms from August through October, and they'll only be available for a couple more weeks. Before we know it we'll be in summer flower season, so be sure to stop by the MMFF tent for the last touches of spring!

Kevin's got another tasty line-up this week. Be sure to ask him for advice on what type of sauces to pair with each of the ravvies (as my six year-old nephew calls them). Kevin is chock full of smart culinary tips!
