Captain's Corner

The weather windows have been very short so far this year but there's been a number of boats that were able to get out and back quickly to put a few Wahoo in the box. Most of the reports haven't been outstanding but still great compared to the slow bite we had last year. So far boats have been averaging 3-4 Wahoo per trip with a few Grouper as well. Gulf Coast Mariner magazine added a few Wahoo tips you can check out in their latest issue or visit
Gulf Coast Mariner. Good luck to everyone and stay safe!

Tag & Release Program: Setting the Record Straight
Started in 1991, The Billfish Foundation's Tag & Release Program is a cornerstone of the work TBF does to conserve billfish and ensure billfishing for future generations. Since its inception, the program has grown to become the largest active billfish database in the world with over 220,000 records from across the globe. While most avid offshore captains and anglers have become familiar with TBF and our Tag & Release Program over the years, there are still some misconceptions and unawareness out there that needs to be dispelled.

It's Wahoo season, and what better time for a delicious Wahoo recipe! The
![](http://files.ctctcdn.com/7c34d562101/1b23f1ba-7b30-453f-8820-842aa656c43d.jpg?a=1123657811438) Caribbean Wahoo Salad was submitted by Club Director Brian Yeager. Oscar Nelson first introduced Brian to the tasty salad while fishing in the Caribbean on Yandell Roger's Anejo. Enjoy!
Caribbean Wahoo Salad
Ingredients:
Grilled Wahoo steaks or fillets,
2 1/2 - 3 pounds

3 spears of Vlasic brand, kosher dill pickles, diced and dried with paper towels
|
2 hard-boiled egg whites, chilled and diced
|
|
2 cloves of fresh garlic, minced
|
2 small cans of minced black olives, drained
|
|
1 pinch of Kosher salt
|
1 whole red onion, diced
|
|
1 ½ Cups mayonnaise
|
2 table spoons of horseradish
|
|
Cajun seasoning to taste if desired
|
Allow grilled Wahoo to cool to room temperature. Chop and mince Wahoo meat and place in a large mixing bowl. Cover and refrigerate while remaining ingredients are prepared. In a second mixing bowl, add minced garlic and kosher salt and grind to make a fine paste. Add chopped red onion and minced black olives. Stir in horseradish, diced pickles and diced egg whites. Add chilled Wahoo meat and mayonnaise to mixture and stir thoroughly.
Cover and chill salad at least an hour before serving. Add Cajun seasoning to taste if desired. Best served with a selection of saltine and Ritz crackers.
