News from the Cellar
Harvest 2022 has begun which means the crew is busy processing the grapes, from our vineyard and our partner vineyards. Ever wonder what the process is for making wine? White wine grapes go through the crusher destemmer and immediately to the press which separates the juice from the grape pomace (seeds, skins, stems). Then the juice goes into a tank for fermentation. Red wine grapes go through the crusher destemmer and then the juice and grape pomace go into a tote to ferment. After fermentation, it goes through the press and then the wine ages in either a barrel or tank.
News from the Vineyard
We have picked two of our seven varietals in the vineyard! La Crescent and Itasca have been processed and will soon become beautiful white wines.
The remainder of the grapes will be picked in the coming weeks using "Harvey" the Harvester.
