Health Advice from CERI... Morning Latte with Mom. | |
One of my favorite traditions and one the single thing that gets me up in the morning is latte with mom.
She has a magic touch, especially with milk, that is a gift. Some folks think that giving dogs milk or milk products is not healthy, but I have done my research and I am here to say a few things about this topic.
First of all, you must determine whether your pooch can tolerate lactose.. For some of us, yogurt and cheese are more dog-friendly options. Mom often shares plain yogurt (never sweetened yogurt) with me as a topping for my food. I especially enjoy Greek, thick and creamy. For a special treat, mom makes me high protein Cheesecake Bites featuring cottage cheese and nonfat yogurt. She is the best cook, not just for humans, but for dogs, too! DENISE'S COOKING CORNER - Smashed Hamburgers with Caramelized Onions from the Barefoot Contessa

Preheat oven to 350 degrees
INGREDIENTS
Canola or grapeseed oil
4 cups (¼-inch) sliced red onions (2 medium)
1 teaspoon sugar
1 tablespoon good red wine vinegar
1½ teaspoons dry mustard powder, such as Colman’s
Kosher salt and freshly ground black pepper
1¼ pounds ground bison
1¼ cups grated Gruyère cheese (4 ounces)
DIRECTIONS
Heat 2 tablespoons oil in a large (12-inch) sauté pan over medium heat, add the onions, and cook for 8 to 10 minutes, stirring occasionally, until the onions are tender and starting to brown. Add the sugar, reduce the heat to low, and cook for 10 to 15 minutes, stirring occasionally, until the onions are browned and caramelized. Add the vinegar and cook for 30 seconds to deglaze the pan.
Meanwhile, combine the dry mustard, 1½ teaspoons salt, and ½ teaspoon pepper in a small bowl. Place the bison in a medium bowl and sprinkle on the mustard mixture. With your fingers, lightly work the mustard into the beef and shape into four 1-inch-thick patties. Place them on a plate and freeze for exactly 15 minutes.
Heat a large (12-inch) cast-iron skillet over medium-high heat and add 1½ tablespoons oil. From the freezer, place the burgers directly in the hot skillet. With a large metal spatula, firmly press each burger into the pan.
Cook the burgers without moving them, so the bottoms get browned and crusty. Flip the burgers, then spoon on the onions and sprinkle the Gruyere on top. Place a lid on the skillet and cook the burgers for 1 to 2 minutes until the cheese is melted and the burgers are medium-rare inside. Serve with roasted carrots.
Roasted Carrots.
2 lbs. carrots , 2 Tbsp olive oil,1/4 tsp freshly cracked black pepper,1/4 tsp garlic powder
Preheat the oven to 400ºF. Peel or scrub the carrots, then cut them into one-inch sections.
Place the carrots onto a parchment-lined baking sheet. Drizzle the olive oil over top, then season with salt, pepper, and garlic powder. Toss the carrots until they are well coated in oil and spices.
Roast the carrots in the preheated oven for 20 minutes, then give them a good stir. Roast for an additional 10-15 minutes, or until they reach your desired level of browning.
Taste the carrots and adjust the salt or pepper to your liking.
This is the perfect comfort food for summer entertaining or the 4th of July.

DENISE'S READING CORNER - The Wager by David Grann | |
If you enjoy novels about wrecked treasure ships left at sea, you will love this one! On January 28, 1742, a shabby ship, patched-together with sticks and cloth, washed up on the coast of Brazil. Inside were thirty emaciated men, barely alive with an extraordinary tale to tell. They were survivors of His Majesty's Ship, the Wager, a British vessel that had left England in 1740 on a secret mission during an imperial war with Spain.
The Wager had been chasing a Spanish treasure-filled galleon known as "the prize of all the oceans," when it wrecked on a desolate island off the coast of Patagonia. The men, after being marooned for months and facing starvation, built the flimsy craft and sailed for more than a hundred days, traversing nearly 3,000 miles of stormy seas. They were greeted as heroes.
Six months later, another, even more decrepit craft landed on the coast of Chile. This boat contained three castaways, and they told a very different story. Between accusations of treachery and murder, the Admiralty convened a court martial to figure out who was telling the truth. Whomever the court found guilty would be hanged.
I found this book to be well-written and quite thrilling like an adventure book. Although the subject matter was not of great interest to me, I changed my opinion as the story developed. The author takes a maritime scandal from long ago and engulfs the reader in a suspenseful thriller! It's a riveting, page-turning tale.
