Old vines cropped to low yields are the key ingredient here, with traditional winemaking practices employed - temperature-controlled fermentations in stainless steel, and ageing in tanks and old oak casks for the premiers and grands crus.

The Chablis' of Billaud-Simon perfectly combine power and intensity with elegance and a lightness of touch, unforced and pure yet with ample weight and impressive longevity. They are recognised as one of the very best domaines in all Chablis.

In 2014 the domaine was sold to Burgundy behemoth Domaine Faiveley, yet new ownership has not altered its operation in any way, remaining autonomous and focused solely on quality.  Alongside Raveneau and Dauvissat, Billaud-Simon sits comfortably at the top of the Chablis tree.

The 2015 vintage in Chablis was a very strong one, producing wines of good ripeness and density yet retaining their hallmark freshness and minerality.
